pot roast / leftover sandwiches

Sometimes the best meals in life are the simplest. Pot roast is definitely one of the dishes that proves this true to me. It can sound intimidating, as you can certainly get your Julia Child on with a pot roast. Or, you can put in minimal effort for maximum culinary pleasure. Here's my in-sane-ly simple pot roast recipe:

  • 1 giant pot roast
  • 1 onion
  • 1 bag of baby carrots
  • 4 potatoes, sliced
  • Deli rolls
  • Provolone


Place pot roast in giant dish. Peel onion, Fill up 1/3 of thickness of pot roast with water. Cook for hours. Throw in potatoes and carrots for last ½-1 hour.

No, I'm not kidding. Seriously, just cook the thing for like 4 hours, or until it's literally ready to fall apart. I'm sure there's a science to it (1 hour per 1/2 lb. or something), but you really don't need to get technical - just cook the damn thing. It will come out great, trust me.

But wait, that's not all - you get two for the price of one in this post! Even better than the pot roast dinner is the leftovers the next day. And EVEN BETTER are the sandwiches you can make the day after. Just grab a couple deli rolls, butter each side and brown them on a skillet. Add some of the shredded pot roast and a couple slices of provolone and heat until the cheese melts and you've got one of the most amazing sandwiches.
